I fall under the category of people who did way too much research. Ended up deciding that for a first bike I think this would be a great fit. I'm 5'8 200 lbs and figure a WR 250 R supermoto is a good starter bike for me. For my experience i've owned a TTR125 and TT230 and figure that I could handle it.

What im wondering is, how much would a used one cost me realistically and what should I save up to buy it? Also do you think this is a good starter bike for myself or am I making a mistake?

Why would you think that the WRR would not make a good first bike? Too anemic, too tall, too heavy? All these are legitimate concerns depending on what you intend to do with the bike, so what is your primary concern?
