The manual says to unbolt the coolant reservoir and turn it upside down to drain. This seems impossible with the conduit to the case being mostly metal and wrapped behind the header. Can't I keep it simple and unclamp the hose portion, pop the cap and let it drain that way?

Fairly certain that they're talking about the tank on the other side - overflow tank.

Exactly.
The thing in your pic is the radiator.

The reservoir is on the other side of the bike, behind the thing that looks like a radiator air scoop, but really isn't.
There's even a slot moulded into the black panel in front of it to allow easy reservoir level inspection.

The coolant in the radiator and the rest of the cooling system is drained via removing a bolt (that has a copper washer under it's head) on the water pump cover.
The water pump cover is the thing the coolant hoses in your pic run downward toward and attach to.
